Rajasthan tours in north India is an important tourist destination for its architecture shopping textiles and artifacts. The state not only has rich cultural heritage but serves cuisine that tempt the taste buds of the tourist population. Each type of food is relished with delight. Rajputs a local community are non-vegetarians. Their eating habits are modified by the Mughals and European cooking. They consume Mughal recipes such as fancy curries, intricate kebabs, colorful aromatic pulaos or the rice dish with spices, vegetable and meat. The local people adhered to their customary eating patterns. The Vaishnavas are devotees of Lord Krishna thus do not consume meat in any form. Bishnois community does not believe in kill to eat and are cautious in food intake. The Marwaris are strict vegetarians. Jains believe in vegetarianism and eat their last meal before sunset.

Dal-bati keeps well for long durations and batis the wheat dough rounds can be cooked by burying it in hot sand. When cooked it is eaten with sugar and lots of ghee and lentils. Soola meat dish is barbecued on open coal fire a tradition dating back to nobility on hunting grounds. Bajra bread prepared in Indian style is the staple food of common man. This roti is eaten with jaggary and fat less curd churned with water. To name a few food items served till today are apart from dal-bati, and churma, is sula-smoked kebabs, a dozen ways of cooking lamb with different spice combinations, besen ki misi puri, lacha crisp in layers paratha, white meat, lamb meat etc. Arid lentils and beans is an integral part of the food. Gram flour modification in recopies in visible in pakodi, gatta ki sanzi, khata, etc. Chutney is prepared out of coriander, mint, garlic and turmeric.

Even though every region of the state prepare food in almost similar way still cities are renowned as dish specific. Laddoos are hot favorite of people of Jodhpur, and Jaisalmer, Malpuas belongs to Pushkar, rasgullas are relished by Bikaner, Dil-jani is from Udaipur, Ghevar and Mishri Mawa a specialty of the people of jaipur. If in Ajmer you are bound to eat sohan halwa and sweet jalebis. Bhujia, mathri, Khatta-meetha, sev, dal-moth are some of the salty snacks of the state. Mawa Kachori is a Jodpur speciality, Mawa is renowned of Alwar, Rasogullas are from Bikaner Malpuas a pride of Pushkar Dil Jani a delicacy from Udaipur and Sohan Halwa belongs to Ajmer. The residents of the state prefer to begin their day with Jalebis and Fafda accompanied by hot milk first thing in the morning.
